Cinnamon Pear Breakfast Strata

Bursting with cinnamon flavor and sweet seasonal pears, this delicious cinnamon pear breakfast strata is so fun and special for holiday breakfasts and weekend brunches.

Need a breakfast that’s mostly hands off so you can spend time with your loved ones? Breakfast strata is the perfect choice! They’re so easy to make and require very little prep time.

If you’ve never had a breakfast strata before, it’s basically like a combination of a bread-based casserole and bread pudding. This naturally sweetened cinnamon pear version is similar to a “French toast” casserole made with gluten free bread.

Breakfast strata gives that cozy, comforting feeling and make your family or guests feel loved. This special breakfast casserole is always a crowd pleaser! It’s perfect for breakfast in bed for two, fun for serving your whole family, and extra special for holiday breakfasts or entertaining guests.

This is the kind of breakfast that you want to bring right to the table and serve family-style while it’s still hot and bubbling. Let your family and guests scoop out a nice portion of the strata and have delicious toppings ready for them.

Just as you’d serve pancakes or waffles with maple syrup, this cinnamon pear breakfast strata deserves the same. It’s delicious drizzled with pure, real, maple syrup.

For an extra special touch – serve with freshly made whipped cream or a scoop of homemade vanilla, maple or cinnamon ice cream.

-16 oz. gluten free bread, cut into 1” chunks – I used gluten free sourdough

-3 tbsp grass-fed butter, ghee or avocado oil – melted and cooled

-4 pastured or organic eggs

-1 ½ cup milk of choice – full fat coconut milk is my favorite dairy free option

-½ cup real maple syrup or honey

-1 tbsp vanilla extract

-2 tsp ground cinnamon

-3 pears, cored, peeled and cut into ½” chunks


1. Grease a 1 ½ quart casserole dish and set aside. Preheat the oven to 350 degrees F.

2. Add healthy fat of choice and eggs to a very large mixing bowl. Break the egg yolks with a spatula, whisk or wooden spoon and stir the mixture until fully combined. Add the milk, maple syrup, vanilla and cinnamon and stir to combine. Pour the bread cubes and pear pieces into the mixing bowl then gently fold all of the ingredients together.

3. Pour the mixture into a greased casserole dish and bake for 40-50 minutes, or until bread cubes are slightly golden brown and the egg mixture has cooked through, is bubbling around the edges and has puffed up (the strata will slightly puff up towards the end of the baking time and will settle when cooled).

4. Serve immediately topped with maple syrup.

-Yield: 6 servings

-Serving Suggestions: This strata is also delicious topped with caramelized pears, homemade whipped cream or a scoop of homemade vanilla, cinnamon or maple ice cream.

-I recommend placing a baking sheet on the rack below the strata in the oven to catch any bubbling over spills just in case. Depending on the shape and size of your casserole dish, this may or may not happen.
